POSITION PURPOSE

ESSENTIAL JOB FUNCTIONAL COMPETENCIES:

Demonstrates the knowledge and skills necessary to provide service/care appropriate to the age of the patients served, in accordance with Mercy standards.

Exhibits pleasant and cheerful demeanor and maintains a helpful attitude towards employees, physicians, patients and visitors.

Prepares all food items in a sanitary and timely manner.  Operates and cleans equipment to transform raw food for cooking.

4.

Follows standardized recipes, portioning and presentation standards.  Completes and utilizes daily production worksheets and waste log sheets.  Tastes completed meals to ensure quality.

5.

Cleans and maintains work station while practicing good safety, sanitation and organizational skills.  Utilizes safe food handling practices.

6.

Restocks food items and supplies as needed to maintain appropriate levels in a state of readiness.

7.

Communicates to manager food product needs, i.e., food items, supplies, etc.

8.

Communicates any patient or customer related problems to appropriate personnel.

9.

Completes all daily, weekly or monthly reports (i.e., daily temperature log) as outlined in the department policies and procedures on a timely basis meeting all prescribed deadlines.

10.

Prepares menus and/or trays for all therapeutic diets and is mindful of age-specific preferences.

11.

Works to ensure that all food items are properly stored, labeled, dated and rotated as needed.

12.

Is able to work all line station areas as well as the bulk prep area.

13.

Follows recipes to standardize food preparation and has the ability to determine how to properly cook food products.

14.

Assists in training others regarding recipe knowledge and procedures, product specification, plate presentation and other cook duties and responsibilities.

15.

Assists in controlling food costs by reporting and stopping waste and over portioning.

16.

Is flexible with varying schedules to assist with special events, unexpected activities or other food and beverage operational demands.

17.

Is knowledgeable of and actively participates in improving patient safety and reducing risk to patient safety and reducing risk to patients.  Complies with Safety and Infection Control Policy & Procedure.

18.

Maintains a working knowledge of applicable Federal, State, and local laws and regulations, Mercy and Trinity Health’s Organizational Integrity Program, Standards of Conduct, as well as other policies and procedures in order to ensure adherence in a manner that reflects honest, ethical, and professional behavior.

19.

Maintains confidentiality of information pertaining to clients, physicians, employees, and Mercy business.

20.

Demonstrates general working knowledge of computers and department specific software (i.e. Healthstream, internet, etc.)

21.

MINIMUM QUALIFICATIONS

High school diploma or GED required. Must have a minimum of 1-2 years previous institutional or health-care food service experience. Must have a basic understanding of professional cooking and knife handling skills. Must have the ability to read and comprehend simple instructions, recipes, production-system reports, short correspondence and memos.  Requires ability to write simple correspondence and to effectively present information in one-on-one and small group situations to customers, clients, and other associates. Must have a general working knowledge of computers and department specific software (i.e. Healthstream, internet, etc.) Must be comfortable operating in a collaborative, shared leadership environment. Must possess a personal presence that is characterized by a sense of honesty, integrity, and caring with the ability to inspire and motivate others to promote the philosophy, mission, vision, goals, and values of Mercy and Trinity Health.

PHYSICAL AND MENTAL REQUIREMENTS AND WORKING CONDITIONS

Must successfully pass employment physical examination and must adhere to applicable organizational requirements on an annual basis for Employee Health Directives.  Must possess the ability to comply with Mercy and Trinity Health policies and procedures. This job is categorized as ""Medium Work"".  Has the physical stamina to meet the requirements of this job.   Exerting 20 to 50 pounds of force occasionally, and/or 10 to 25 pounds of force frequently, and /or greater than negligible up to 10 pounds of force constantly. Must be able to handle stress effectively. Must understand and accept the possibility of exposure to environmental elements, internal and external, which may affect the work place, such as infectious disease, chemical and/or chemical fumes, dust, noise, physical injury from an out of control patient, and adverse effects of inclement weather which may occur.
